I love ruby streaks, but haven't really had trouble with it bolting. Most mustards I've tried get stronger tasting as it get warmer or the plant gets older. Maybe try it again in the cooler months. It's one crops that I can keep going throughout the winter- without heat, and it really does taste milder then.
